It was a breezy Monday morning in Quezon City when Andres “Andoy” Santiago got out of his black Toyota Fortuner. He was wearing only faded jeans, an old hoodie, and a beanie that covered most of his face. There was no trace of the wealthy businessman usually seen in a barong or expensive suit.
But that’s really the plan.
The Boss Who Pretended to Exist
Andoy is a self-made millionaire . The humble soup kitchen on the corner of España Blvd has become Santiago’s Kusina — one of the most popular eateries in Metro Manila for tapsilog, arroz caldo, and other home-cooked dishes.
But in recent months, complaints have been pouring in : rude staff, rude language, indifference to customers.
Instead of using CCTV or having HR investigate, Andoy decided to go back to his roots : checking the kitchen as a “nobody”.
The Unexpected Scene at the Cubao Branch
He chose to visit the first branch in Cubao , where his dream came true — where his own mother used to sell banana cue and turon in the back.
As soon as he entered, he saw that the previous energy was gone.
Two cashiers are at the front:
A girl chews gum while tiktok
A middle-aged woman, “ Aling Marites ,” was visibly tired and irritable.
There is no “Good morning.”
There is no “Welcome.”
Nothing.
“Next!” shouted Aling Marites.
Andoy ordered a bacon silog and a coffee bar. No smile. No patience. The change was just thrown on the counter.
Andoy sat on the side. Watched.
A mother repeated her order three times.
An old man was denied a senior discount.
A waiter shouted cheaply inside the dining area.
But the most painful thing?
He heard someone laughing at him from behind.
“That old man smells like a sewer. It looks like he came from under the LRT!”
“Maybe he should demand extra bacon, it looks like there’s no fare!”
Andoy’s world stopped.
Not because he was offended for himself,
but because this was the kind of customer he was fighting for.
The Rise of the Real Boss
He stood up. Approached the counter. Quietly.
“Excuse me,” he said.
“Sir, the complaint hotline is on the receipt,” said Aling Marites.
Andoy smiled — but his eyes were cold:
“Just a question—do all your customers get treated like this, or does it depend on their looks and money?”
The cashiers looked at each other.
“I am Andres Santiago. I am the owner of Santiago’s Kitchen.”
The TikTok girl’s cellphone fell.
Aling Marites turned pale.
“You didn’t just break the rules.
You insulted the people we were supposed to be taking care of.”
He called Ramon , the branch manager.
“Starting today, you two are suspended.
I will be manning the counter until we are sure that the heart returns to our kitchen.”
The True Service
Andoy put on the apron.
Approaching the construction worker who had been embarrassed earlier:
“Brother, free coffee. I’m sorry about what happened. Our kitchen isn’t like that.”
From 9 a.m. to noon,
she made coffee herself, took orders, helped clean up.
Helped a grandmother carry the tray, and handed banana ketchup to the group of students.
The New Policy
At noon, he went outside for a moment.
He looked at the diner’s signage. He took a deep breath.
Picked up the cellphone, texted HR:
“New policy: All employees must work a full shift with me. No exemptions.”
Then, go back inside.
